This recipe is SUPER easy, and a last minute Go-To desert!
LOVE it, and apparently so does everyone else that has had a slice.
1 graham cracker crust. 1 lemon. 1/3 cup lemon juice. 1 can eagle brand milk. 1 container of cool whip.
First open your graham cracker crust and put it to the side, until you get your filling mixed together. Roll the lemon a couple of times to wake up juices inside of the lemon, incase they have been snoozing for a bit;) Using a fine grater, or a lemon zester, scrape the surface of the lemon to remove some of the Zest. Save the zest for a pretty little garnish when the pie is complete! Juice the lemon into a measuring cup. If you don’t get the complete 1/3 cup of juice from the one lemon, use another lemon, or bottled lemon juice works just fine. In a medium size bowl Pour in the eagle brand milk, and the 1/3 cup of lemon juice. Mix well, then pour the filling into the pie crust. Top the filling with the container of cool whip, then garnish with the Lemon zest. and that’s it!
